What’s for breakfast?

We’ve heard over and over again that breakfast is the most important meal of that day, but the reality is it’s not just making sure to eat breakfast that’s important…it’s what you’re eating that plays a roll too.

So what do I think is good for you? Well, what has calcium, B-vitamins is high in protein and full of fibre? Steel cut oats! I had them this morning topped with slivered almonds, organic raisins, toasted coconut, raw cacao nibs (which are full of antioxidants) a dash of cinnamon and a little squeeze of honey.   Ymmmmm……sooooo good, and good for you!

I know what you’re thinking, eating a proper breakfast is hard because of how rushed you always are.  Trust me, I do get it.  But lets be truthful, most days you’re so tired that you just push the “snooze” button one too many times right? 😉  Having to stand over the stove stirring a fresh pot of steel cut oats every morning isn’t really my thing either. With two children, lunches and then work, I tend to be pretty rushed myself.  The best way to have a great week ahead is getting prepared with batch cooking.  I usually do it on Sundays to make breakfast, lunch and dinner’s easier for the family. For breakfast, I like to pre-cook steel cut oats.  This way, no matter what time I get up, breakfast is always ready.  I just head to the fridge, scoop out as much as I need, re-heat and top with my favourite ingredients.
