
A fresh, crisp salad bursting with flavour and vibrant colours! This salad is lovely as a side or can be made into a meal by simply topping it with loads of hemp hearts (I love them on everything) and avocado slices, my fresh Mediterranean chicken or sauteed garlic shrimp.
Ingredients:
(Recipe makes 1 large salad)
- 1 spirilized zucchini (I just use my little handheld spiralizer.)
- 1/2 cup raw julienne beets
- 1/2 cup sliced carrots
- 1/3 cup coarsely chopped fresh mint
- 1/3 cup chopped fresh dill
Directions:
Wash and peel all vegetables. Spirilize the zucchini, julienne and slice the beets and carrots and chop up the fresh herbs. Serve topped with my refreshing lemon vinaigrette dressing.

For The Dressing:
- 1/4 cup fresh lemon juice
- 1/4 cup apple cider vinegar
- 1 tsp minced garlic
- 1/2 cup extra virgin olive oil
- pinch of himalayan pink salt
- 1 tbsp dried oregano
Directions:
- Whisk all ingredients together or blend in a high speed blender.
- Lightly drizzle over salad.
