
These yogurt smoothie oat bowls are such a simple way to get a powerful punch first thing in the morning!
High in fibre, protein, a multitude of vitamins and minerals and those good-for-you omega 3’s!
Ingredients:
- 1 ripe banana
- 1 cup frozen mixed berries
- 1 cup unsweetened almond milk (you can use 0% or 2%, cashew or coconut milk too)
- 1 cup coconut water
- 1 cup spinach
- 1 cup 0%plain yogurt
- A couple drops of stevia (optional)
Directions:
-Blend until smooth and serve 4 – 1cup portions.
Top with:
•1/4 cup oats (I use the Only Oats brand)
•1/4 cup chia seeds
•1/2 cup mixed fruit (I chose bananas + strawberries)
•1 -2tbsp of shredded coconut, or slivered almonds/walnut halves, or some dark chocolate chips.
~ Mix well and let sit for 10 minutes or so. The chia seeds will expand and thicken the mixture up. If you want it a little thicker you can always add more oats.
