Oven Roasted Beets with Balsamic Vinegar

I literally use beets in almost every recipe! I love them in salads, smoothies, dips, the list is endless!  I incorporate them into our diet as often as I can as they pack quite the health punch.  Beets are loaded with vitamins and minerals such as iron, magnesium, calcium, vitamin A and C, niacin and phosphorous. They also contain folic acid and are known to help cleanse our colon and our blood.  If that wasn’t enough, beets also help protect against heart disease and strengthen our gall bladder and our liver. What’s there not to love?

Here’s this super-simple recipe:

Oven Roasted Beets with Balsamic Vinegar

Ingredients:

  • 5 Large Beets
  • 1-2 tbsp. Balsamic Vinegar
  • 2 tbsp. Avocado Oil
  • Himalayan Pink Salt
  • Garlic Powder
  • 1/2-1cup Water

Directions:

  1. Preheat oven to 375° F.
  2. Wash, peel and dice your beets into roughly 1-inch pieces.  Place them into a large bowl and toss the beets with your avocado oil, Himalayan salt, and a dash or two of garlic powder.
  3. Place the beets in a baking dish and add about 1/2- 1cup of water. Cover with foil and roast for 15 minutes.  Remove foil and continue to roast for about another 10-15 minutes, or until tender when pierced with a fork.
  4. Once tender, remove beets from the oven and transfer to a serving dish with a perforated spoon. Drizzle with balsamic vinegar and enjoy!
