I truly was inspired by Astro’s Original Balkan Style yogurt today as they had the best recipe right on the container. You can also go online for more recipes, but before you do that I really recommend you make this refreshing cold soup first!
Just as a note, I made some changes to the recipe, I made note of the changes below. Hope you enjoy it as much as I did!
INGREDIENTS
1 | English cucumber, peeled, seeded and diced |
1 | ripe avocado, peeled, seeded and chopped |
1 cup | Astro Original Balkan Style 0% Plain yogurt |
1 cup | water |
2 tbsp | chopped fresh dill |
1 tsp | lemon juice |
½ tsp | salt |
¼ tsp | dry mustard |
pinch | cayenne pepper |
1tbsp | chopped fresh chives or green onion |
PREPARATION
- Remove ¼ cup of the cucumber for garnish.
- In a blender, purée remaining cucumber, avocado, yogourt, water, dill, lemon juice, salt, mustard and cayenne pepper until smooth.
- To serve, garnish with reserved cucumber and chives. Refrigerate for 1 hour or for up to 12 hours.
Here are my recipe changes: I added 1/2 tsp of minced garlic and 2 tbsp of lemon juice instead of just the 1 tsp it calls for. I also didn’t add the mustard or the cayenne pepper. Not because I didn’t want to try it this way but because I didn’t have the spices handy. 😉 Sometimes I guess we just need to improvise. It turned out great and was quite the refreshing hit!
